Chocolate Covered Espresso Beans are SUPER easy to make at home, and we have 2 techniques that go from stupid easy to easy, but more controlled.
The best coffee beans to use are anywhere from medium to dark roast. If you go too dark, you will get a burnt taste (because a French Roast often is a charred coffee bean). We went with a local dark roast called “Critical Mass Dark Roast.” It’s brewed by Rogue Elephant Coffee Company, and it’s our go-to for not only coating with chocolate, but making espresso from!
For the type of chocolate, that’s all personal preference. We prefer dark chocolate for this application, and we went with a 60% cacao. Make sure to get chocolate that is easy to melt. The microwave on 30 second intervals works perfect, but you can always opt for stove top.
